Sencha is a steamed green tea from the Shizuoka region of Japan, harvested in the early summer (the first/second flush). It produces a rich, brothy texture, with a clean, very refreshing green aroma. Thus the famous Japanese proverb, If you drink the first ear of tea, you will be hated; the first ear of tea is referring to Sencha, the first flush of the year.
